Broccoli Soup Recipe | Amish Country Cooks in Berlin, Ohio
Broccoli Soup Recipe from Healthy Choices Cookbook
 
2 c. Broth
1 T Vegetable Soup Base
1/2 c. Carrots, shredded
10 oz. Broccoli
2 T Butter
4 T Flour
1 Medium Onion, chopped
1/2 tsp. Salt
1/2 tsp. Pepper
2 1/2 c. Water
1 c. Cheese
1 c. Mashed Potatoes

Simmer broth, soup base, carrots and broccoli until tender. Use as much broccoli as desired. Simmer butter, flour, onions, salt and pepper in large saucepan. Stir until thick. Add water and cheese. Add broth and broccoli to mixture, then add mashed potatoes.
