Corn Bread Salad Recipe


 
1 (8 oz.) pkg. Jiffy Corn Bread Mix
1 can Green Chilies
1/8 tsp. Cumin
1/8 tsp. Oregano
1/8 tsp. Sage

Mix corn bread according to directions also add green chilies, cumin, oregano and sage. Bake at 400 for 20-25 minutes. Cool.

1 c. Mayonnaise
1 c. Sour Cream
1 env. Ranch Dressing Mix

In a small bowl mix together dressing then set aside.

1 (15 oz.) can Pinto or Kidney beans
1 (15 oz.) can Whole Kernel Corn, Drained
1 c. Chopped Green Onions
1 c. Chopped Green Peppers
10 Slices Bacon, Fried and Crumbled
2 c. Shredded Cheese
3 med. Tomatoes, Chopped

Crumble half of the corn bread in a 9x13 pan. Layer with half of the rest of the ingredients in order given: beans, dressing, corn, tomatoes, peppers, onions, cheese and bacon. Then repeat the layers. Refrigerate at least 2 hours.
